I feel your pain. Try Onetastic. It's free and will fix your sorting problem, and probably several other things. It adds macros to your OneNote, but just those macros you choose, and you can write your own. While you can open multiple notebooks at once by hacking around, I highly recommend you work on them one at a time. Store the notebooks all in the same place, like on onedrvie in the same folder, so they are easy to find and always available to you.

If you really don't have to have all of them open all time, don't. OneNote is great but large numerous notebooks might cause slow downs. As you adapt to OneNote please try Labels - they work like Hashtags with extra bells.
The latest version of, Microsoft’s free note-taking and information management application, just added a big new feature: multiple windows support. OneNote for Mac version 15.36 and up finally lets users work with more than one window, allowing for easy reference between different sections of the same notebook, and collaboration between two separate notebooks. Here’s how it works. First, make sure you update OneNote for Mac to the latest version, as this feature is absent in versions prior to 15.36. Once you’re updated, launch the OneNote app and select Window New Window from the menu bar at the top of the screen. Alternatively, you can use the keyboard shortcut Control (⌃) + M. A second instance of OneNote will appear in its own separate window.
This second window functions exactly like any other OneNote window, allowing you to browse the sections and pages of your notebooks, switch notebooks, and add or edit data. As mentioned, this can be super handy for looking at two sections of the same large notebook at once, or for comparing or copying data between different notebooks. And it doesn’t just stop at two windows. You can continue to open additional windows as desired.
When you’re done with your multiple OneNote windows, just close any that are no longer needed and the app will continue to run with any remaining open windows. You can also quit the app using Command (⌘) + Q to close all windows at once. Unfortunately, OneNote currently does not retain your multiple windows, so the next time you open the app it will load just the single window and you’ll have to re-open any desired additional windows manually.
